What “Zairai” Means

Zairai Sencha is a rare Japanese green tea made from zairai tea trees, which have grown naturally in the region for generations. Because these trees are grown from seed—not cloned—each one has its own unique aroma and flavor. This creates a cup with a gentle, rustic fragrance and a complex, layered taste, allowing you to enjoy the natural character of the land. It is a tea that reflects the original essence of Japanese green tea.

About the Tea Garden

Ujitawara is known as the birthplace of Sencha, a historic tea-growing region in Kyoto. Located about 30 minutes from Uji Station, the quiet mountain valley offers ideal natural conditions for high-quality tea:

  • Pure spring water
  • Sunlit mountain slopes
  • Cool winds flowing through the valley

Tea grown in this environment is known for its fragrant aroma, soft sweetness, and deep umami. Farmers here continue to practice tea-making that respects nature, and their careful handwork brings out a beautifully balanced flavor. The tea from Ujitawara offers aroma, sweetness, and clarity, making it a refined cup for both everyday enjoyment and special moments.

How to Brew (Hot)

Warming your teapot and cup beforehand helps maintain the ideal temperature and enhances the flavor. The same leaves can be enjoyed for three infusions.

1st Infusion

  • Tea leaves: 2g
  • Water: 100–150ml (adjust to taste)
  • Temperature: 70°C / 167°F
  • Steeping time: 1 min 30 sec
  • Pour out every last drop
  • Keep the lid open after pouring to prevent the leaves from deteriorating

2nd & 3rd Infusions

  • 2nd infusion: 80°C /176°F
  • 3rd infusion: 90°C/194°F
  • A quick pour is enough, as the leaves are already open Enjoy how the flavor changes with each temperature.

How to Make Cold Brew Sencha

Cold brewing extracts the tea slowly, resulting in half the caffeine and a naturally sweet, smooth flavor.

  • Tea leaves: 13g
  • Water: 1L (use half for 500ml)
  • Steeping time: 4 hours in the refrigerator
  • After steeping, remove the leaves and store in the refrigerator
  • Consume within 48 hours

Storage

Green tea is delicate and easily affected by odors and temperature. Store it in a tea canister or in a cool place, sealed tightly to maintain freshness.
