What is Gyokuro — A Tea Made to Savor Umami

Gyokuro is a special Japanese green tea known for its deep umami and gentle sweetness. Brewed slowly at a low temperature, it reveals the refined, mellow flavor that Ujitawara is famous for.

About the Tea Garden — Ujitawara, Kyoto

Ujitawara is a historic tea‑growing region in Kyoto and the birthplace of sencha. Located about 30 minutes by car from Uji Station, the area is surrounded by quiet mountains and ideal natural conditions for tea cultivation.

  • Pure spring water
  • Sun‑kissed mountain slopes
  • Cool breezes flowing through the valleys

These conditions produce tea leaves with rich aroma, soft sweetness, and deep umami. The farmers’ careful, nature‑aligned craftsmanship is beautifully reflected in every cup. Ujitawara tea is well‑balanced in aroma, sweetness, and clarity—perfect for both everyday enjoyment and special moments.

How to Brew (Hot) — 1–2 servings

  • Tea leaves: 3 g
  • Water: 40–50 ml
  • Temperature: 50–60°C (122–140°F)
  • Steeping time: 2 minutes

Key Points

  • Brew slowly at a low temperature → enhances umami and sweetness
  • Use a small amount of water → creates a thick, rich Gyokuro character
  • Pour out every last drop → captures the full depth of flavor

Gyokuro evolves with each infusion: Umami → Sweetness → Light, pleasant astringency

Second infusion

  • 70°C (158°F)
  • 30 seconds
  • Balanced sweetness and umami

Third infusion

  • 80°C (176°F)
  • 10–15 seconds
  • Light and refreshing astringency

Cold Brew Gyokuro

Cold brewing brings out remarkable sweetness and a clean, transparent finish— a method that showcases Ujitawara Gyokuro at its best.

  • Tea leaves: 10 g
  • Water: 500 ml
  • Steeping time: 3–4 hours in the refrigerator
  • Remove leaves after extraction and consume within 48 hours

Flavor Smooth sweetness, clear aftertaste, refined umami
